A very fast skater meal done in less than 10 mins. I made pesto shrimp and zoodles for lunch. It’s so easy and what I found in my kitchen. I didn’t bother making the pesto sauce but found a jar hiding in the pantry😉

Two large zucchini spiralized
2-3 tbsp Parmesan cheese
1 tbsp olive oil
2 cloves of garlic
Pepper to taste
Shrimp in pesto (if you have time you should make your own pesto🤩) Put olive oil in pan, throw chopped garlic and cook for 30 seconds to a minute. Add zoodles and use tongs to turn it from time to time. Don’t overcook, you want the zoodles to be al dente. Sprinkle Parmesan cheese on top and place cooked pesto shrimp on top. #skatermeals
