Healthy Spicy Chicken Bowl: * 2 lbs. boneless skinless chicken breasts, cut into small pieces * 3 tablespoons any spicy seasoning mix. I always use mccormicks Cajun spice  * Olive oil * 3 sweet potatoes, peeled and diced * 4-5 cups broccolini * 4 cups Brussel sprouts * 4 cups spinach * Salt and pepper  1. Preheat the oven to 425 degrees. Toss the chicken pieces with the spices and olive oil. Store in the fridge for about 20 minutes while you prep other ingredients. I always use a plastic bag to quickly marinate the chicken. Just put the chicken pieces and seasoning into a zip loc made and squish around to combine. Great if you don’t love handling raw meat :) 2. Arrange the vegetables on their own sheet pans and drizzle with olive oil, salt, pepper. Arrange the spiced chicken on a separate sheet pan. 3. Bake all ingredients for 20-30 minutes. Remove the broccoli and chicken. Stir brussel sprouts and cook another 5-10 min or until done. Stir sweet potatoes and roast another 15 minutes or until cooked completely.  4. Sauté spinach over medium heat in pan with olive oil, salt and pepper.
