Suns out ☀️ búns out! Cuz really, warm weather calls for crunchy, crisp and refreshing bún chả giò (Vietnamese egg rolls over rice noodles bowl). These are vegetarian egg rolls, just use firm tofu instead of pork. Squeeze as much water as possible and crumble like feta with shiitake mushrooms, wood-ear mushrooms, carrots, onion and bean thread noodles for the filling. So good! 😋
