YES, VERY YUMMY! Many of you have been asking me for the recipe of "DT's Pesto Pasta with Pan-fried Chicken".
Here you go:
• 2 cups basil (mine is homegrown 😉)
• ¼ cup toasted pine nuts
• 4-5 tbs olive oil
• 1 tsp lemon juice
• 1½ tbs minced garlic
• ½ cup shredded parmesan cheese
• ½ tsp salt
• ⅛ tsp pepper
• Chicken thighs
• Paprika powder
• Your desired pasta
Blend olive oil and basil leaves for 1 min. Add toasted pine nuts (set aside 2 tbs for serving), garlic, lemon juice, parmesan cheese, salt and pepper and blend for another 1 min. Taste and adjust the ingredients as desired.
Season chicken thighs with salt, pepper and paprika powder. Pan fry them with salted butter 6 mins on each side.
Meanwhile, cook your desired pasta according to package instructions, be sure to use salted water. Transfer pasta to a serving dish. Add homemade pesto sauce and stir into pasta until evenly distributed.
Add shredded parmesan cheese and sprinkle remaining toasted pine nuts. Lastly, top pasta with the pan fried chicken thigh and serve!

P.S. Refrigerate the leftovers and have it as cold pasta the next day. Just add some shredded cucumber and cheese! 🤤
