Chicken Tikka Stuffed Peppers

Ingredients

2 packs Chicken Tikka Masala

4 medium bell peppers, red, yellow and green

2/3 cup black beans

¾ cup corn

¼ cup chopped cilantro leaves, not packed

Chopped chives

THE YOGURT SAUCE

½ cup full fat yogurt

½ small jalapeno

½ stalk green onion

Salt to taste

¼ tsp. garam masala spice

2 tbsps. lime juice

3 tbsps. cilantro leaf (close to ¼ cup but not packed)

Instructions:

· Defrost the meal ahead of time.
· Preheat oven to 400 F.
· Cut the top of the peppers and remove the core.
· Place the peppers on a baking dish and spray with olive oil. Bake at 400 F for 10 minutes.
· Meanwhile, prepare the filling.
· Remove the chicken pieces from the sauce and place on a cutting board. Chop them into smaller pieces and transfer to a bowl.
· Start adding the rest of the ingredients in the bowl: the rice, the sauce, corn, cilantro and black beans.
· Mix them all together.
· Once the pepper cooks for 10 minutes, remove and stuff them with the filling.
· Return the stuffed peppers back into the oven and bake for another 10 minutes.
· Remove from the oven, let it cool for a few minutes and drizzle some of the yogurt sauce on top.
· Top with some chives and serve.
