Big Ass Meatballs + Roasted Tomato Sauce 🍅🤌🏼 ain’t too pretty but tasty as hell AND easy — set oven to 300 and slow roast tomato, onion, garlic with olive oil, salt, pepper, fresh oregano, dried basil till blistered not burnt. Hand mix or blend. With olive oil, a shallot, and garlic, add mix into pot. Using beef broth & wine for more liquid till it’s a liquid sauce but not soupy. Add salt, pepper, Parm rind, fresh parm, basil, and simmer for 30-40 min till thick. 🍅 For meatballs: 1 pound beef, 1 pound pork, 2 eggs, 2 slices of white bread soaked but strained in milk, 1/2 cup Parm, fresh oregano, salt, pepper, 3 garlic clove. Oven at 450 till brown but not fully cooked then transfer into sauce on low simmer and cook through for 25 min. Serve with bucatini, parm, and basil. 🍝
