Before trader joes sold & then discontinued (boo 👎) their beloved stuffed red peppers, my mom made them for me growing up, and as an adult I’ve made it one of my life missions to master the recipe. It’s simple to make and filled with protein to keep you strong & eatin good all week. All you need is some red peppers, garlic, a yellow onion, rice and your favorite marinara. Truthfully when I was learning to make these and experimenting with the recipe- I learned quickly that canned tomatoes, which is what most recipes call for, didn’t work for me. It didn’t taste the way I remembered it. Which is why I love @ciaopappy marinara for how well-spiced, authentic and fresh it tastes on everything from pasta to these stuffed peppers. I don’t see how this recipe couldn’t be life-changing if you’ve never tried them <3 @fromthelobby

Ingredients:
* 3–4 large bell peppers, insides removed
* 1 tablespoon olive oil
* 1 pound ground turkey (feel free to use your vegan ground “meat” of choice)
* 1/2 diced yellow onion
* 3 cloves garlic, minced
* Italian seasoning
* Salt, to taste
* Freshly cracked black pepper
* Crushed red pepper flakes
* Ciao Pappy Marinara Sauce
* 1 cup cooked brown rice or cauliflower rice (I used TJ’s frozen Mexican cauliflower rice)
* Mozzarella cheese

* Preheat oven to 375 degrees. Place the peppers in a pot of boiling water for about 10 mins *
1. Heat a large deep skillet over medium-high heat. Once hot, add the olive oil and then ground turkey. Brown the turkey, breaking it up as it cooks. *I added the onions and garlic first, but it took longer to cook, so add the turkey first*
2. Once the turkey is brown, add the diced onion, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Cook for 3-4 more minutes or until the onion is tender.
3. Stir in the brown rice and add the marinara sauce. Let the sauce simmer for 2-3 more minutes. Remove from the heat and add cheese.
4. Stuff the pepper halves with the filling and place them on a baking sheet.
5. Bake uncovered at 375 degrees for 20-25 minutes.
6. Remove from the oven and garnish with fresh cilantro or parsley, hot sauce if you love spicy food, and eat with sour cream
