Did you know, fruit and vegetables are some of the most wasted foods inside our homes? On today’s episode we show you how to recreate this yummy chargrilled marinated veg recipe paired on a Jacob’s cracker. It’s amazing what you can create with leftover ingredients instead of letting them go to waste! 😀

Ingredients

Veg - Courgette, aubergine, pepper, asparagus, onions
1 Lemon
2 Garlic cloves
Olive oil
Fresh thyme (optional)

Feta, cottage cheese, cream cheese

Method

Get a chargrill pan on the heat while you prepare your veggies. Slice the veggies into thin pieces so they cook quicker.

Pop them in a bowl and drizzle with a little oil then start char grilling, cook for 2-3 minutes each side or until you have a nice char on the them.

While the veggies are chargrilling make a marinade out of lemon juice, zest, grated garlic, olive oil and if you have it fresh thyme leaves.

As the veggies get cooked add them to the marinade and season with salt and pepper.

Now all you need to do is pick your cheese, load up the crackers and get stuck in.
