昨晩行った横浜の熾火レストラン。こりゃうまい。

We visited the restaurant "SMOKE DOOR" on the first floor of the renovated hotel "THE KNOT YOKOHAMA". It is amazing that they have made it possible to use firewood in the kitchen of a hotel, but what is surprising is that the cooking method used at SMOKE DOOR is "cut-throat cooking". Cauliflower, for example, is cooked over a fire for several days, and the fresh flavor of the cauliflower is locked in, unlike smoked cauliflower. The pork was as tender as a stew, the beef T-bone steak had a delightful aroma, and there were several dishes that took advantage of the wood's power. Other dishes, such as ceviche, potato galette, and avocado toast, seemed to have been conceived by someone who has eaten delicious food in many parts of the world. And the prices are cheap. I wondered if it was safe. Yokohama is an old city, 30 minutes by train from central Tokyo, with its own unique culture. I was there for a few hours for a book, but it felt like a small trip.
