Nagashi somen is a dish consisting of cold white wheat noodles that are commonly served over ice in Japan during the summer. The noodles are first boiled and then chilled, and are usually enjoyed with a sauce called tsuyu, which is made from dashi soup stock and soy sauce. Some popular toppings for somen include sliced cucumber and mushrooms. Although somen has been a part of Japanese cuisine since the eighth century, it wasn’t until modern times that people started sending the noodles down man-made streams for added entertainment.
