@theeasternphilosophy —Changing Eggs (Bian Dan), are a Henan specialty snack, preserved like Century Eggs, but with a distinct taste and texture. They stay fresh for a long time, reducing food waste. Unlike Century Eggs, Changing Eggs are golden yellow with clear egg whites, not black. Century Eggs have a strong smell and taste, while Changing Eggs are milder. Not only are they enjoyed as a delicacy, but they are also known for their effectiveness in relieving heartburn due to their alkaline nature. This quality helps counteract the overproduction of stomach acids and acid reflux.
They’re made using boiling water, raw eggs, soda ash, pickling lime, sawdust, and tea leaves. Eggs are dipped in an alkaline paste, rolled in sawdust, and after a few days, they’re ready to eat.
