His story was amazing because he was a self taught chef at 37 years old who won three Michelin stars and a rare 10 out of 10 in the Good Food Guide for his restaurant Nico at Ninety in London in the mid 1990s, inspiring a generation of British chefs in the process. His voice in the industry is Recipease and the Chefs he trained really did make a difference, and even though I never met my hero, that didn’t mean I didn’t benefit from his years of hard work. In recent years, he very kindly reached out to me and I guess you would say we became penpals what a charming lovely man.
