It’s rosehip season so we foraged some and made Apple-Rosehip Muffins! Cut the rosehips in half and scoop out the seeds with a small spoon. Dry them on the lowest heat setting in the oven with a wooden spoon wedged in the oven door for air to circulate (or use a dehydrator if you have one!). Leave until they are dry, then crush into a powder using a mortar and pestle or in a grinder/blender. Dried rosehips stored in an airtight jar last well into next years season so you can enjoy that vitamin C boost all year long❤️
Here is how to make use of those fall apples and rosehips at the same time:
2 cups flour
2 tsp baking powder
2,5 tsp cinnamon + 1tsp to coat apples
1 tbsp dried rosehip powder
1/2 tsp salt
2,5 cups diced apples
2 eggs
1/2 cup milk
1/2 cup butter (room temp)
1 cup sugar
1 tsp vanilla
Mix all dry ingredients together
Sprinkle cinnamon over apples and set aside
Cream together butter + eggs + sugar + vanilla
Carefully dry and wet ingredients together, then add the milk
Fold in apples!
Scoop into muffin tin
Bake for 25-28 min at 375F
