Day 2 in my quest to get dinner on the table in less than 30 mins. Aiming for 25 today. Throw out any ideas in the comments for future episodes that you want to see done FAST
- Cauliflower pasta
- Caprese

Caprese doesn’t need a recipe just mix tomatoes and mozz together if tomatoes are still in season. Season with salt and olive oil.

For the cauliflower pasta: cook the spaghetti until al dente. Reserve 1/4 cup of the cooking water. Drain and set aside.

In a large skillet, sauté 2 cups of chopped cauliflower with 2 tablespoons of olive oil. Add in a chopped shallot. Sauté for 8ish minutes. Add a few tablespoons of water and cover with a lid to make sure it’s fork tender. Once water has evaporated, add in 2-3 chopped cloves of garlic and cook for 30 seconds.

Add the pasta to the cauliflower and reserved cooking liquid. Season to taste with salt and pepper and lemon juice. Add Parmesan as desired! BOOM. Done
