Ingredients:

For the cake:
1 box spice cake mix (15.25 oz)
15 oz canned pumpkin puree
3 large eggs

For the compote:
20 oz can Dole Crushed Pineapple
12 oz fresh cranberries
⅓ cup granulated sugar

For the cream:
1 ½ cups heavy whipping cream
8 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
⅛ teaspoon salt
¾ cup crushed gingersnap cookies

Directions:
Preheat oven to 350 degrees F. Grease a 9x13 baking dish by spraying with baking spray.

In a large bowl, using a hand mixer or whisk, mix together cake mix, pumpkin puree, and eggs. Stir until well combined then pour into prepared dish. Bake 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely then cut cake until small squares (while in dish) then set aside.

In a small bowl, beat heavy whipping cream until stiff peaks form. Set aside. In a larger bowl or stand mixer, beat cream cheese, sugar, vanilla, pumpkin pie spice and salt until smooth. Fold whipped cream into the cream cheese mixture until well combined. Set in fridge until ready to use.

In a medium saucepan over medium high heat, add cranberries, pineapple, and sugar. Stir and cook until mixture comes to a low boil. Continue cooking until slightly thickened, about 10 minutes. Set aside to cool completely. Place in fridge until ready to assemble trifle.

In a trifle bowl or large glass bowl, layer 1/3 of the cake cubes and crumbles, 1/3 pineapple cranberry compote, and 1/3 cream filling. Repeat two more times ending in cream. Top with crushed cookies.

Refrigerate at least 3 hours before serving.

Note:
Can also be made in individual clear glasses.
