One of the easiest ways to convince my kids to eat this summer vegetable. The spaghetti squash, garlic, and tomatoes are all from our garden! Recipe below.

1. Preheat oven to 400°. Slice spaghetti squash in half and add about an inch of water to the pan.
2. Bake until tender and the squash pulls apart easily with a fork (~45 mins - 1 hour).
3. Once cool enough, scoop out seeds and shred spaghetti squash with a fork.
4. For sauce, sautée garlic, olive oil, salt, and diced tomatoes in a pan.
5. Add spaghetti squash to sauce and mix together. Serve hot.
