Chef Pía Léon was born and raised in Lima, Peru where she immersed herself in the ingredients and biodiversity the country has to offer, learning how to cook from her mother and beginning her own culinary exploration in her native city of Le Cordon Bleu. After several years working at Latin America’s top restaurant, her and her husband @VirigiloCentral opened @KjolleRest in 2018, a space that acts as a love letter to Peru through its cuisine, art, and atmosphere. On Kjolle, she says: “I didn’t create it entirely on my own, definitely not. It’s my project, but it’s teamwork. Kjolle’s concept revolves around highlighting the mega diversity of ingredients from the four regions of Peru, valuing ingredients from the sea and the coast, through the Andes, to the Amazon. In one dish only you can taste different ecosystems of Peru together, a coastal product, and an Andean fruit, for example.
