@cauespada One of my favourite cheese producers ever in the hills of Le Marche, Italy. With 2000 sheep that are free to roam over 600 hectares of wild, organic land, the pecorino cheeses and ricotta are truly sublime.

I first visited in 2021 and again last week to see their production, taste and talk about life and the world. I can’t help but get philosophical around Alessandra and some delicious cheese. Everyday they produce up to 15 types of cheese from their milk, with the leftover whey “recooked” to produce the ricotta.

To taste fresh still warm ricotta that has never been refrigerated is other worldly. With just salt, pepper and local olive oil or with honey is a lesson in simple perfection.
