Mango Tapioca Ingredients:
1 1/3 cup tapioca starch
1/3 cup beet juice (or more if needed)
1 ripe mango
1 tsp grounded chia or flaxseed
Fresh grated coconut to taste
1/4 cup water

Directions:
1. Mix the tapioca starch and the beet juice in a bowl until you get dry dough that holds together when you press it. (Let the dough rest for 5 to 10 minutes.)
2. For the filling, add the mango to the pan over medium heat with 1/4 cup of water. (Let it cook for about 2 minutes.)
3. Add the chia seeds and coconut flakes and cook for 3 more minutes. 
4. Coming back to the tapioca, sift the pink tapioca starch to get a fine flour.
5. Add 2 to 3 handfuls of tapioca flour to a hot skillet and press it lightly with the back of a spoon to even it out. Let it cook for 2 minutes (the heat will bring the tapioca together).
6. When the sides of the tapioca pancake starts to lift its ready to remove it from the pan.
7. Add the mango filling, fold the tapioca like a taco and enjoy it!
