This simple sandwich is one of my favourite flavour combinations. Creamy hummus, ripe avocado slices, fresh lime juice and the sweet heat of chilli jam. You can swap out the chilli jam for a drizzle of chilli sauce if you want.
HUMMOUS, AVOCADO
AND CHILLI JAM SANDWICH
Makes 1 Sandwich
INGREDIENTS
2 slices of sandwich bread of your choice.
2 tablespoons hummus
1 tablespoon chilli jam
1⁄2 hass avocado, peeled, stoned and thinly sliced
squeeze of lime juice
little pinch of sea salt
METHOD
Spread the 2 slices of sandwich bread generously with hummus.
Spread the chilli jam on top of one slice, and then arrange the avocado slices on top of that.
Squeeze a little lime juice over the avocado and season with a little pinch of sea salt.
Sandwich the other slice of hummous bread on top, and eat. 😊
