I am obsessed with this delicious watermelon and feta salad 🍉 I love the flavour combination, plus it’s so quick and easy to put together, it’s become my go to of mine 🥗

I used:
180g watermelon
200g feta
200g sweetcorn
200g of endamane beans
140g spinach
A handful of cherries
1/2 bunch of mint

For the dressing:
1tbsp Balsamic glaze
1tbsp Olive oil

1. Simply lay your spinach base and then add your ingredients on top!
2. Add your protein of choice - I love it with prawns or chicken.
3. Add your balsamic glaze and olive oil dressing.
