EASIEST Egg Frittata recipe: 🍳
2 eggs
Handful of spinach
1/4 small onion
1/4 small sweet potato, cooked
1/8 large tomato
Pinch of Himalayan salt
Toss leftover veggies with eggs into a greased microwave safe dish and cook on high for 30-40 seconds. Stir and repeat until cooked through. 🍴
The best thing about this recipe is that you can completely customize it depending on what you already have hanging out in your fridge! Pro-tip: Add some egg whites or deli meat for that extra protein bump! 👍
