20 Min Baked Orange Chicken & Broccoli 🥦

This is the perfect weeknight dinner for 2! Taste just like Panda 🐼 Express but healthier and has a nice little kick 💥 from the red pepper flakes!

FOR THE BROCCOLI:
1 medium head broccoli cut into florets
Olive oil
Salt & Pepper to taste
.
FOR THE CHICKEN:
1/3 c seasoned Panko breadcrumbs
Salt & Pepper
1lb chicken breasts cut into 1-inch pieces
Green onions
.
FOR THE SAUCE:
½ c freshly squeezed orange juice
2 tablespoons honey
2 tablespoons soy sauce ( I use liquid aminos)
1 tablespoon minced fresh ginger
2 cloves minced garlic
¼ cup water (a little more if sauce gets too thick!)
1 tablespoon cornstarch
Red pepper flakes to taste

DIRECTIONS:
1. Preheat oven to 400F
2. Place the broccoli on the baking sheet. Drizzle with the oil and sprinkle with the salt and pepper.
3. Prepare the chicken: Place breadcrumbs, salt, and pepper into a large ziptop bag & shake a little to combine.
4. Add the chicken pieces in a single layer on the open side of the baking sheet and bake for 10-15 mins until cooked through
5. While the chicken cooks, prepare the sauce: In a medium saucepan (one large enough to hold the sauce and the chicken), whisk together the orange juice, honey, soy sauce, ginger, and garlic. In a small bowl, whisk together the water and corn starch, until smooth. Add to the saucepan.
6. Bring the mixture to a boil and cook until the sauce is thickened and reduced.
7. Stir in the red pepper flakes (be careful how much you add it will be hot!) and adjust seasoning as desired. If your sauce is too thick add a little more water
8. Add the baked chicken to the pot and stir to coat with the sauce.
9. Top with scallions & sesame seeds and serve with white rice!
