まぐろのヅケ。塩をしてちょっと水分を取った柵を熱湯にくぐらせてから氷水で冷やし、拭いて、醤油・日本酒・ちょっとみりんも加えて煮切り、常温に戻した漬け汁に浸した。一日漬けて、昨晩食べようと思ったのに忘れて（チキンカツを揚げてしまった）、朝ごはんになりました。残った刺身を醤油に漬けて翌朝食べるってのは静岡の実家ではよくありました。

I bought a rather inexpensive tuna, so I decided to make zuke. I heated the surface of the tuna in boiling water, cooled it, and soaked it in soy sauce-based marinade for a day. The flavor is concentrated in the tuna.
